Sprouted Forbidden Rice and Turnip-Grape Salad

salat2Black Forbidden Rice has been eaten in regions of Asia for thousands of years; in fact for centuries it was reserved for only Chinese royalty. Now its popular everywhere in the world and you can find it easy in big food stores in Japan.

The striking black color of Forbidden Rice is due to its high concentratin of anthoycyanins, the highly potent antioxidants also found in blackberries and blueberries! Black Forbidden Rice also contains dietary fiber, anti-inflammatory properties, and has the ability to help stop the development of diabetes, cancer, heart disease and even weight gain.

Like any other grain, seed, or nut, black rice needs to be soaked prior to eating. This is help release the physic acid that lurks within, which makes certain important minerals such as zinc and iron calcium and magnesium un-absorbable. After soaking black rice overnight you already can eat it, but it’s better to sprout it! If you sprout black rice, all nutrition value will increases by several times! It’s easy to sprout black rice – to soak overnight and the next day is sprouted, soft, tastes like cooked and it is really amazing you will love this!

How to sprout Forbidden Rice

  • Sprouting is as easy as soaking raw Forbidden Rice overnight in a jar topped with filtered water overnight.
  • Drain water, rinse well rice and leave it a little wet only.
  • Cover bowl with a towel and leave on the counter to sprout, usually between 12-24 hours (warm or moist environments cause faster sprouting time)
  • While sprouting, rinse Forbidden Rice about three times a day with slightly warm water
  • When rinsing, mix gently with your hand as Forbidden Rice will sprout faster in the center.

salat3Sprouted Forbidden Rice and Turnip-Grape Salad

for the salad

1 cup black forbidden rice

1 big white turnip (kabu) or 2-3 small – grate or cut

1-2 cups seedless grapes – cut into quarters (optionally, use a variety of grapes)

bunch cilantro leaves or other greens

for the dressing

2 tablespoon raw hemp oil

1 tablespoon sesame tahini (goma paste)

1 teaspoon apple cider

1 teaspoon raw soy sauce or tamari

1-2 teaspoon natural sweetener of your choice (coconut nectar, agave, maple syrup, other)

pinch sea salt

to make the dressing

Mix together tahini and hemp oil in a small bowl. Add the rest of the ingredients and stir into a smooth dressing.

to make the salad

Combine rice, white turnip, grapes and cilantro leaves in a large mixing bowl. Pour the dressing over and toss to coat.

Note: Instead of white turnip you can use cauliflower, can add several types of grapes of different colors for the beauty and taste. Apple cider vinegar has to be raw and natural, you can replace it with lemon juice.
