Raw Blueberry Coconut Hemp YogurtThe health benefits of the lactic bacteria in yoghurt are well known. One of the words you’ll be hearing more of in relation to yogurt is ”probiotics.” Probiotic, which literally means ”for life,” refers to living organisms that can result in a health benefit when eaten in adequate amounts. We know, our body needs to have a healthy amount of ”good” bacteria in the digestive tract. Yogurts are made using active, good bacteria. Raw Blueberry Coconut Hemp Yogurt provides the same benefits as traditional yogurt, with the added nutrition of enzyme-rich ingredients.
Nearly any non-dairy milk can be cultured, including legume, nut, seed, grain, coconut milk or coconut meat. While non-dairy milk will culture without a thickening agent, but to produce a spoonable, fairly thick yogurt, we need a thickener. You can use irish moss, cashew nuts or hemp seeds as a thickener. In this recipe I use young coconut meat and raw hemp seeds for health benefits and hemp seeds provide the texture of a greek yogurt, a coconut only yogurt will be a bit thinner.

Raw Blueberry Coconut Hemp Yogurt

  • 1 ½ cup young coconut meat
  • 1 cup coconut water or more if needed
  • 1 cup blueberries (fresh or frozen)
  • 1/4 cup or less coconut syrup (or sweetener of choice)
  • 1/2 cup raw hemp seeds (soaked 15 minutes)
  • 1/2 teaspoon probiotics
  • 1/2 lemon (or other citrus) juice
  • 1/4 teaspoon vanilla extract or vanilla powder
  • pinch sea salt

Raw Blueberry Coconut Hemp YogurtBlend coconut meat, raw hemp seeds and coconut water until smooth. Add in probiotic and blend until just combined. Place in a covered bowl in a dehydrator at 105° F (40C), for 8 to 10 hours or use your yogurt maker. The yogurt needs to be in a warm place, but with a good air-flow. The yogurt will develop a crust from being in the dehydrator, which is still edible. Once fermented, stir well.

After your yogurt is fermented and ready to be served, let’s flavor it with blueberries, sweetener of choice and acid. Add a pinch of salt and a lemon juice, vanilla and blend until smooth. Adjust the sweet, acid, and flavor components to your taste. Sometimes coconut water is so sweet, so you dont need add any sweetener!

Note: You can use any kind of a probiotics powder or raw probiotics, personally I use HealthForce vegan probiotic powder for 3 years already.
